Healthy Chocolate Cake!

We love chocolate cake, but we don’t always love the ingredients. Store-bought chocolate cake can have any number of unfavourable ingredients from refined sugars to preservatives to harmful oils. Some even contain MSG.

For a healthier option, we tried making chocolate cake out of simple, natural alternatives to the standard cake ingredients:

Cake:

1 Medium Zucchini

1 Cup of Sunflower Butter or Nut Butter of Choice

½ Cup of Organic Maple Syrup

½ Cup of Cashew Milk or Dairy-Free Milk of Choice

½ Cup of Unsweetened Cocoa Powder

1 Cup of Gluten-Free Oat Flour

1 Tbsp. of Ground Chia Seeds

3 Tbsp. of Water

1 Tsp. of Alcohol-Free Vanilla Extract

1 Tsp. Baking Soda

¼ Tsp. of Himalayan Pink Salt or Sea Salt

Frosting:

½ Cup of Coconut Butter

½ Cup of Milk of Choice

3 Tbsp. of Maple Syrup or Raw Honey

3 Tbsp. of Cocoa Powder

¼ Tsp. of Himalayan Pink Salt or Sea Salt

Directions:

  1. Preheat oven to 350 degrees.
  2. Make “Chia Egg” by combining chia and water together in a small bowl and placing in the fridge to thicken for approximately 5 minutes.
  3. Shred zucchini and strain excess juice with a cheesecloth or thin, clean tea towel.
  4. Combine the zucchini, butter of choice, maple syrup, milk of choice, chia egg, and vanilla extract into a large mixing bowl and stir until well combined.
  5. Add oat flour, cocoa powder, and baking soda. Stir until well combined.
  6. Line bread pan with parchment paper (can lightly oil with avocado or coconut oil) and empty mixture into bread pan.
  7. Bake for approximately 50 minutes.
  8. Remove cake from the oven and the pan. Let cool on the counter or cooling rack for 20 minutes.
  9. Prepare frosting by placing coconut butter and maple syrup or honey into an oven-friendly dish. Bake for 5-7 minutes. Mixture should look half-melted.
  10. Remove mixture from the oven and add milk of choice. Whisk mixture together until well combined and even in texture.
  11. Add cocoa powder and salt. Whisk until well combined.
  12. Once the cake has cooled, add the frosting!
  13. Add whatever toppings you like: coconut shreds, chocolate chips, pecans, etc.

Moist and flavourful, this chocolate cake is guilt-free and delicious while also satisfying many different dietary requirements. Depending on which options you select from the ingredient choices, the recipe can be vegan, gluten free, refined-sugar free, nut free, soy free, and oil free. It is safe for almost everyone. A perfect dessert for hosting friends and family!
